Lately I have been struggling a bit with eating healthy. I’ll post more about this soon, but let’s just say that I have been struggling more since I’ve been home from Las Vegas than I actually did while I was in Las Vegas. To be completely honest with you, my feelings of guilt and frustration are part of the reason the Las Vegas recaps aren’t completely finished yet. I promise I’ll get them up soon.
While I will be doing a 30 day detox from Arbonne (30 Days to Feeling Fit), I am not planning to start that until February. There are a lot of reasons for that, but the biggest is the fact that I will need to give up caffeine for the full 30 days and I have my comprehensive exam coming up along with a case presentation and I need my caffeine for the time being.
I have realized, however, that I really need to get back on track with my eating even before then, so today I tried to take photos of all my food. That’s something I haven’t done in quite a while. Lucky for me, it’s also What I Ate Wednesday! Thanks to Jenn for hosting the WIAW link up.
BREAKFAST

Breakfast was an Arbonne vanilla protein shake. Lately I’ve been adding spinach and a banana in addition to the almond milk, but today was feeling lazy and just mixed 2 scoops of the powder with 8 oz. of almond milk. Tasty and easy!
LUNCH

I eat way too many meals at my desk. I know I’ve said that before, but it’s worth repeating. Lunch was a roast beef style tofurkey sandwich with hummus and spinach and a side of orange bell pepper.
SNACK
I took the last bit of my birthday cake to work today so my coworkers could help me finish it off. Having it in the house is bad news after a couple of days (simply because I’ll eat it all) so I had a farewell piece today for a snack. This photo is actually from a few days ago, but I forgot to snap one today, so you get a repeat.
DINNER

Tonight at dinner I tried cooking with coconut oil for the first time. It was fantastic! I loved that the coconut flavor was subtle, but brought out some of the sweetness in the bell pepper I made. I added cumin to the dish (otherwise consisting of egg whites and spinach in addition to the pepper), and it was fantastic. It also took me all of 10 minutes to make. Those are my favorite kinds of dinners! I forgot to snap a pic of the glass of white wine I had with dinner.
SNACK

One of the things Joe got me for my birthday was a bag of dark chocolate covered tart cherries (he’s the best, huh?), so I had four of them after dinner. I’m so proud I only had four and that the rest of the bag is still sitting on the table.
STUDY JUICE

I know, study juice isn’t a real thing, but if I’m going to be up for a while longer tonight working on studying for my comps, I need something to keep me going!
Between dinner and the chocolate cherries and study juice (I’m going to keep saying it), I got in 40 minutes of kickboxing a la Turbo Jam. It was a great workout and I felt so good knowing that I had burned off some of my calories, especially considering today’s sweets. I know myself and I know that I’ll never be able to give up dessert for the rest of my life, so my balance is in being able to only have four chocolate cherries rather than the whole bag and one piece of cake.

Coffee is my one “vice” – I probably should stop drinking it, but that warm cup in the AM is just so good!

I thought it would be a lot more difficult than it has been, honestly. I lived by coffee (I also love the taste of a good, strong cup of black coffee). I’m really seeing the benefits of switching to b vitamins though. Have you ever heard of Arbonne? I’ve been using their energy fizz tabs and I love them!
“Study juice” – love it! I’m like you, I’ll never give up sweets completely (they’re one of life’s greatest pleasures for me) but I’ve decided I’m giving my body THE BEST in taste and quality, and am going to be satisfied with a little bit!
